Standing on its own, or accompanying a dish, the perfect cocktail is versatile and a welcome addition to any food trip. GRID x Tanduay: Cocktail Culture is a series following mixologist Dondz Bolante around the Philippines as he crafts cocktails inspired by the flavors of the archipelago.

A usual pilgrimage destination, the relaxing city of Naga is also brimming with adrenaline-pumping activities that’ll keep you on your toes. Adventure parks, waterfalls, the nearby wakeboard complex, and a trek to Mt Isarog will leave you breathless and in need of refreshment.

For mixologist Dondz’ latest drink, he takes inspiration from—and mixes spoonfuls of—the region’s infamous dish: the Bicol Express. Tempered by lemon juice, it’s also surprisingly refreshing with a savory backbone. Perfect for adventure-seekers.

The Naga Express

3 barspoons Bicol Express
20 ml fresh lemon juice
20 ml simple syrup
50 ml Tanduay Rhum

How To Mix:
Shake all ingredients with ice cubes in a shaker tin. Salt the rim of a cocktail glass. Double strain the mixture into the cocktail glass. Serve with a side of Bicol Express.
