The unceasing beat of the country’s capital is felt best at the historic district of Binondo, where one can catch a glimpse of the glory days of Manila. Then the town’s thoroughfare, Escolta Street is once again reclaiming its place at the center, dusting itself up to become a hub for bridging the old and the new.
Atop the First United Building, the area’s tallest at the time of its completion, Dondz gives us a take on a classic, a simple drink to match the grit of the old city. Calamansi, ginger, and a swig of the good stuff—a drink to its revival.
2 Ginger 15ml
Simple Syrup 45ml
How To Mix:
Slice 4 pieces of calamansi and 2 pieces of ginger and add to shaker tin. Add 15ml of simple syrup and muddle. Add 45ml of Tanduay Rhum. Add cube ice and shake. Pour to glass, garnish with calamansi and a slice of ginger, and serve.
