Bolinao

Standing on its own, or accompanying a dish, the perfect cocktail is versatile and a welcome addition to any food trip. GRID x Tanduay: Cocktail Culture is a series following mixologist Dondz Bolante around the Philippines as he crafts cocktails inspired by the flavors of the different regions.

Up the northwest tip of Luzon lies the coastal town of Bolinao, famed for its limestone rock formations, underwater caves, and white sand beaches. Dondz adds a lively twist to a favorite beachside refreshment, infusing the sweet, full-bodied taste of crushed mangoes in milk with just a kick of sour lemon. Pair it with a slice of sticky sweet Binunguey, a local delicacy in Bolinao, and you’ve got yourself the perfect mix to battle out the summer heat. 

Bukidnon Brew

  • 3 Mango slices
  • 15ml lemon juice
  • 15ml simple syrup 
  • 30ml fresh milk
  • 50ml Asian Rum Silver

 

How To Mix:

Slice mango and crush in a shaker tin. Add lemon juice, simple syrup, fresh milk and rum. Add ice and shake. Pour mixture into a glass and finish with a slice of Binunguey. 
Sip and enjoy!
