Helping yourself to a table of food from Serbesa feels a lot like a food trip down the streets of Singapore, weaving through street joints of Athens, then on to Madrid, and Manila, and even Lima. It’s a whole world of street food creations; its mashups and mixups, chaos and creativity; and the entire experience (from food prep to logistics to setting the table) is run by a total of one.

JC Carandang cut her teeth as a sous chef in the busy kitchens of Rambla before setting off on her own to meld her elevated kitchen skills with her relentless creativity.

Fueled by the drive to try everything and anything, she takes inspiration from her trips to Singapore’s street food scenes and comes up with an amalgam that’s all her own: beer-battered squash blossoms bursting with jalapeno cream cheese; kamote chips seasoned with barbecue and lime glaze, with a side of pico de gallo and cucumber raita; Mediterranean beef kofte balls with sautéed bell peppers, roasted eggplant dressing, and hummus on a flour tortilla; grilled carne asada with shrimp ceviche, aligue aioli, caramelized onions, and kamote chips on a bed of tortilla–these are only a few on the menu, one that sees a new addition every now and then, whenever inspiration strikes. They’re a mix of different cultures garnished with an element of the familiar, making each dish approachable for any diner.

JC serves all this and more under her brainchild, Serbesa MNL, to cater events and pop-up dinners, all while creating her signature drinks for the pop-up cocktail bar portion of Serbesa. If that sounds like a lot of work for one person, it is–but her wells of enthusiasm and experimentation are endless, and her creative spirit shows no signs of fading.
